Tartlets – almond/coconut cream and orange jam

Ingredients

Bitter Oranges Extra Jam 370g

1 roll of shortcrust pastry

100 g almond powder

4 tablespoons caster sugar

2 free-range whole eggs

50 g coconut powder

1 bottle of artisanal wild strawberry-flavoured lemonade

1 pinch of vanilla powder

10 pinches of praline

10 pinches of flaked almonds

Preparation

  • 1.

    Preheat the oven to 180°C.
     
     
    Mix the ground almonds with the coconut powder, sugar, whole eggs and vanilla powder.
  • 2.

    Roll out the dough and cut out circles with a cookie cutter (approx. 10 cm in diameter).
  • 3.

    Line each mould and prick the bottom with a fork. 
     
    Fill with almond/coconut cream and top with 1 tablespoon of bitter orange jam, flaked almonds and praline. 
     
    Bake for 20 minutes. Keep an eye on the baking.
